Ice cream industries are using, aging vats are used to cool and age ice cream mix to improve the creaminess and homogeneity of the finished product. Aging vats are typically made of stainless steel and can range in size from 100–3000 liters. They are often refrigerated by circulating water at +2°C through steel coils on the side of the vat, which is insulated with expanded polyurethane. The mix is then aged at a temperature of around +4°C for at least four hours or overnight, with slow agitation to allow for complete aging. Aging the mix cools it down before freezing, which allows the milk fat to partially crystallize and gives the proteins time to hydrate. This improves the whipping properties of the mix and is essential for preparing large quantities of high-quality ice cream.
